Doughnut Hole Muffins

These taste just like little donut holes but in muffin form. To make them taste even more donut-y, I add a bit more nutmeg than called for. These are just so good!

Ingredients:

1/2 cup white sugar

1/4 cup butter, melted

1/8 tsp freshly grated nutmeg

1/2 cup milk

1 tsp baking powder

1/4 teaspoon salt

1 cup all-purpose flour

Maple Glaze

1 cup powdered sugar, sifted

2 tablespoons real maple syrup

1 to 2 tablespoons milk

For the glaze: stir together the powdered sugar, 1 tablespoon of milk and maple syrup. If it seems too thick to drizzle, add a little more milk, one teaspoon at a time until it will drizzle nicely (I never need to add more milk). This will make enough glaze for 2 batches of muffins.

Directions:

  1. Preheat oven to 375. Grease 24 mini-muffin cups.
  2. Mix 1/2 cup sugar, 1/4 melted butter and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder, salt and flour until just combined. Fill the prepared mini muffin cups about half full. (I find these turn out better if you fill the cups 3/4 and only make 18 to 20 of them).
  3. Bake in the preheated oven until the tops are lightly golden, 15-20 minutes
  4. Cool and drizzle with maple glaze.
