Creamy Tomato Soup with Italian Sausage and Tortellini

So here's a quick, easy, nutritious and super scrumptious meal that you can have on the table in minutes. There are basically only 3 ingredients, so feel free to improvise and add in anything you have the time and energy to do. A crusty loaf of sourdough bread would really make this complete.

Serves 4

Ingredients

1 box of organic Roasted Red Pepper Tomato Soup (like Pacific)

1 package, about 9 oz, cheese tortellini

1 lb (about 3 large links) Italian sausage

Prep

Remove the sausage from the casings if in links

Directions

In a medium large soup pan brown the Italian sausage over medium high heat. If you're using turkey sausage, you may need to add a little olive oil to the pan. Use a spoon or spatula to break up the meat as it cooks. You want to leave it in fairly good- sized chunks.

While the meat is cooking, bring about 3 quarts of water to a boil. Add the totellini and boil for about 7-8 minutes. It will finish cooking in the soup. Drain the tortellini.

When the sausage is cooked through, add the entire carton of soup to the pan along with the tortellini and heat through.

To serve, ladle the soup into bowls and top with grated parmesan and chopped fresh basil, if desired.
