Buttermilk Pancakes

This makes a fairly thick, fluffy pancake, but you can adjust that by adding more buttermilk if you like your pancakes thinner.

1 1/4 cups flour

3 tsp baking powder

1/2 tsp salt

1 tbs sugar

1 egg, beaten

3 tbs melted butter

1 cup buttermilk

Combine flour, baking powder, salt and sugar in a medium bowl, whisk to combine. Add egg & butter, stir lightly. Add buttermilk and stir just to combine. Too much stirring with leave you with rubbery pancakes.

Heat about half a tablespoon of butter a frying pan over medium-high heat (or coat with cooking spray). Pour or scoop the batter onto the griddle, using approximately 1/3 cup for each pancake. Brown on both sides, turning once.
