Chipotle Lime Mayo Dip

Recipe adapted from Food and Wine

Makes about 3/4 cup

1/2 cup mayonnaise

2 or 3 chipotles in adobo sauce, finely chopped or blended

1 tablespoon lime juice

1 tablespoon minced red onion

1 tablespoon chopped fresh cilantro

salt to taste

In a small bowl, combine all of the ingredients and mix well. Season with salt to taste and keep refrigerated until ready to use.
