Blackberry Sangria.

My Version.

25ml cognac,

25ml orange curacao,

25ml lemon juice,

15ml pureed blackberries,

50ml red wine,

lemonade.

Shake with ice, and then strain into ice-filled tall glass; Top with lemonade; Garnish with blackberries, and a sprig of mint.

Canchánchara.

Rhum Agricole, Honey, Fresh Lemon Juice.

Dark and Fruity

Created in 2005.

2 shots Dark Rum (Myers),

3/4 shot fresh lime juice,

3/4 shot strawberry puree,

1/2 shot frais de bois (wild strawberry liqueur),

top with ginger beer.

Build over ice (in a hi-ball/ or poco grande), then stir thoroughly. Garnish with a lime wedge, and half a strawberry. Add two long straws.

Grapefruit Mojito.

50ml Havana Club 3yo Rum,

15ml Orgeat Syrup,

10ml Fresh Lime Juice,

35ml Grapefruit Juice,

8 mint leaves.

Shake with ice, and then strain unfiltered into an ice-filled tall glass; Garnish with a lime wedge and a mint sprig.

Honi Honi.

My Version.

50ml Bourbon Whiskey,

25ml Fresh Lime Juice,

15ml Orgeat Syrup,

10ml Apricot Brandy.

Shake with ice, and then strain into an ice-filled whisky glass; Garnish with an Orange Twist.

Hurricane.

My version.

35ml Dark Rum,

35ml Bourbon Whisky,

25ml Pineapple Juice,

25ml Passionfruit Puree,

25ml Passionfruit Syrup,

15ml Fresh Lime Juice,

Shake with ice, and then strain into an ice-filled pint glass; Garnish with a lime wedge, and a mint sprig.

10ml Gomme Syrup,

5ml Fresh Lime Juice.

Shake with ice, and then strain into a tall glass which is filled with crushed ice; Garnish with a mint sprig, and a blackberry..

Mai Tai

My Version

50ml Myers Dark Rum,

25ml Fresh Lime Juice,

15ml Apricot Brandy,

10ml Orgeat Syrup,

35ml Fresh Pineapple Juice.

Shake with ice, and then strain into ice-filled tall glass; Garnish with a lime wedge and a spirg of fresh mint.

Painkiller

50ml Pusser's Rum

50ml Pineapple Juice

15ml Coconut Cream

15ml Fresh Orange Juice

Shake with Ice, and then strain into an Ice-filled Tall Glass; Garnish with a sprinkling of ground Nutmeg.

Paloma.

My Version

2 shots silver tequila,

juice from a whole lime,

top up with fresh pink grapefruit.

Build in a chilled tall glass filled with ice cubes, which has had the lip of the glass

wiped with a moist lime wedge and then been dipped in coarse salt.

Pineapple Mojito.

50ml Havana Club 3yo rum,

15ml Vanilla Syrup,

25ml Fresh Lime Juice,

35ml Pineapple Juice,

8 mint leaves.

Shake with ice, and then strain unfiltered into an ice-filled tall glass; Garnish with a lime wedge and a mint sprig.

Pisco Punch

My Version.

50ml Pisco Brandy,

25ml Fresh Lime Juice,

25ml Blossom Honey,

50ml Pineapple Juice.

2 dashes of orange bitters.

Shake with ice, and then strain over ice in a tall glass; Garnish with a lime wedge.

Raspberry & Passionfruit Batida

50ml Cachaca,

50ml Pineapple Juice,

15ml Fresh Lime Juice,

15ml Raspberry Puree,

10ml Passionfruit Syrup,

half a passionfruit, squeezed into the shaker.

Shake with Ice, and then strain into an Ice-filled Collins glass; Garnish with a Lime Wedge and 2 raspberries on a clear plastic cocktail stick.

Scorpion

50ml White Rum,

25ml Cognac,

15ml Orgeat Syrup,

35ml Fresh Lemon Juice,

50ml Fresh Orange Juice.

Shake with Ice, then Strain into a Tall Glass, which is filled with Crushed Ice; garnish with a Mint Sprig.

Zombie

3/4 oz. Pineapple Juice

3/4 oz. Papaya Juice

Juice of one lime

3/4 oz. Powdered Sugar

1/3 oz. Apple Brandy

1 oz. Rum, 90 Proof

2oz. Tropical Gold Seal Rum, 86 Proof

1 oz. White Label Rum

Ice generously and shake. Garnish with a slice of pinapple, a green and a red cherry. THEN FLOAT ON TOP RUM OF 151 PROOF. Top off with fine powdered sugar.
