Course Description: These courses are for students who have an interest in the Food Services, Food Preparation, and Hospitality Industry. All topics in these courses will align with the California Career Technical Model Core Curriculum. These topics include: laws, safety, sanitation, food handling, equipment, customer service, food preparation, and an introduction to restaurant operation. The course will utilize Foundations of Restaurant Management and Culinary Arts, Level One (textbook) as well as Knowledge Matters – Virtual Business School - The Restaurant Simulation. Knowledge and growth will be assessed through instructor, self and peer evaluation, practical applications, assignments, activities, and exams.
