From January to May, youth ages 9-18 learn how to cure a ham by applying the process of salting and smoking through workshops at Pickett's Harbor Farms in Cape Charles, VA. Hams are provided by Smithfield Foods. Youth are required to keep a record book during the process and show the hams at the Eastern Shore Agricultural Fair in October.
