Here's a very creamy, very delicious iced coffee drink that uses the cold brew method to achieve a smooth coffee flavor.
To make cold brew coffee combine coffee grounds and water in a 1:8 weight ratio. For example, 8 ounces of coffee grounds and 64 ounces of water. That's also 8 ounces of ground coffee to 8 cups of water.
If you have a half gallon canning jar, it's perfect for this purpose. Place the ground coffee in the jar, then fill the jar up to its shoulders.
Seal the jar, give it a couple of shakes, and store on your kitchen counter overnight or in the refrigerator for 24 hours. As that time passes, shake the jar once or twice to assist in the flavor extraction.
Once the coffee is brewed, use some means to filter the coffee away from the spent grounds (see the method in the video).
Store your cold brew coffee in the fridge. Serve over ice!
Ingredients:
ice
1 part coffee syrup (or substitute -- see below)
3 parts whole milk
2 parts half and half
1 part cold brew coffee
Combine all ingredients and stir. Use more than 1 part cold brew coffee if there is head space in your glass; top your drink off with the cold brew.
In the video, each part I am adding is 1/4 a cup. With the ice and, the whole drink came to about 16 ounces (1 pint).
If you do not have access to coffee syrup, make a substitute for this recipe.
Combine 1/2 cup of cold brew coffee concentrate with 1 cup of granulated sugar (twice as much sugar by volume as coffee).
Heat briefly in the microwave until warm. Stir until sugar is completely dissolved. Store in refrigerator until cooled completely.
