Bacon Fried Cabbage

INGREDIENTS

  • 2 Tbsp butter
  • 4 slices of bacon cut into 1/2 inch strips
  • 1 onion diced
  • 3 cloves of garlic minced
  • 1/2 green cabbage halved and cored
  • Salt
  • Black pepper
  • 3 Tbsp Worcestershire Sauce

INSTRUCTIONS

  1. Heat butter and bacon in a large dutch oven or saucepan; cook the bacon until crisp. Medium high heat for about 9 minutes.
  2. Remove bacon to a plate lined with a paper towel and reserve.
  3. Add onion and garlic to the pot and fry, stirring to scrape browned bits off the bottom.
  4. Slice cabbage into 1/2 inch strips.
  5. When onion is very soft, stir in half the cabbage with 1/2 tsp salt and 1/4 tsp pepper. Stir to mix.
  6. Add the rest of the cabbage and another tsp salt. Mix.
  7. Cover the pot and reduce heat to med-low. Let cook for about 15 minutes, but check periodically to mix and ensure cabbage is not burning.
  8. Uncover when cabbage strips are soft in most spots but still firm in the thickest parts. Add Worcestershire sauce and mix uncovered on med-high heat until remaining liquid disappears, about a minute.
  9. Transfer to serving dish and place reserved bacon on top of cabbage.
