Inspired by the cool breeze of the Kazdağları (Ida) mountains, the crimson glow of sun-dried blossoms, and the ancient culture of healing, we created a drink that is more than just a beverage. At SoleMare Café, our Hibiscus Sherbet embodies the freshness and tranquility that nature graciously offers us.
With every sip, the ruby vibrance of hibiscus refreshes the heart, the warmth of cinnamon embraces the soul, and the sharpness of ginger awakens energy. Balanced by the sweet-and-sour harmony of apple and citrus peels, this sherbet comes to life as a versatile delight — cooling in summer, comforting in winter.
📝 Ingredients (for 1 liter)
2 tbsp dried hibiscus flowers
1/2 cinnamon stick
3–4 cloves
1–2 pieces dried apple
1–2 pieces dried orange/lemon peel
1 slice fresh ginger (or dried ginger)
1 tsp rosehip
1–2 black peppercorns
1 liter water
50 g sugar/brown sugar (optional, adjust for a sweeter sherbet-like taste)
✨ For a summer refresh: add 2–3 fresh mint leaves and a few drops of lemon juice after brewing, just before serving.
✨ For a winter warmth: add 1 star anise, a few extra peppercorns, and a slice of orange.
🍵 Preparation
Bring all ingredients together in a pot with water. Slowly, over heat, the colors deepen, aromas blend, and the healing essences unfold. Once it comes to a boil, simmer gently for 10 minutes. Remove from heat, strain, and nature’s sherbet is ready.
