Our laboratory focuses on exploring the relationship between protein folding and small molecule binding and applying these mechanisms to biotechnology, food science, and medical research. We employ protein engineering, structural biology, and biophysical analysis techniques to investigate protein-ligand interactions in-depth and explore their potential applications in food safety, drug development, and functional ingredient research.
