This isn't like baking, so you can fiddle with the ingredients and guesstimate, without things without worrying too much about the final product tasting bad
1kg of chicken breast (7 - 9 pieces)
200g of curd or greek yogurt (I used 2 of those 100g curd cups with the treacle thing taped on it)
25g (about 4Tbs) of tandoori mix (Mind blown-Your free to use your own spices individually*, but this recipe is about convenience {after taste of Course!}, Buy a mix that has no unwanted things like preservatives or sugar, just look over the ingredients, Food colors are fine I guess since they done affect the flavor)
1 Tbs Paprika Powder
1 Tbs of grated ginger
1 Tsp of Graded Garlic
Non Flavour Oils (Vegetable oil, Refined Coconut and olive oil(those ones that are yellow instead of white and dont smell much)
Mix the curd and spices together and form an orangish paste like shown on the right
Wash your chicken if you are the type to do it (How do I clean? I just wash it once or twice to get all the grimy looking bits and to find loose skin and fat to take out, I don't worry too much anyways, since the heat of the stove will kill any bacteria lurking about)
Poke holes in your chicken with a toothpick or gently with a knife (Skip it if you really don't care, but it will help in marination)
Dump your paste into the chicken and give it a good stir till they are well coated in your paste.
Add some oil to gently coat the marinate (I eyeball it, but about 3-4 Tbs of oil should do the trick).
Mix it once more thoroughly and then let it rest in room temp for 15-20 mins (Or in the fridge for a few hours or overnight)
Take a large enough grilling pan (Preferred but not necessary) and while on a high flame, add oil to lightly cover the base and then add your chicken to cover the pan.
Fry each side for 5 mins on high heat (Would recommend a thong to flip it gently and avoid splash damage from the oil). Add some Rosemary or any herbs you like when you flip, on the oil to get some nice aromatics
Tadda, you got your Tandoori chicken
I used a dash of milk(2-3Tbs) once done to mix with the leftover oil to create a sauce and put that in the container along with the chicken and keep in the fridge
I make these to meal prep and eat it through the week with veggies and roti as wraps or something
