Preheat broiler.
6 loaves Pita Bread Split the loaves to make 12 rounds.
~3/4 cup Extra Virgin Using a pastry brush, lightly coat the rough (inside) side of each round with olive oil.

~1 cup Za'atar Liberally sprinkle the rounds with the Za'atar seasoning (or to taste).
Seasoning*
Place the rounds under the broiler just long enough for the oil to start to sizzle. Be careful
not to burn the edges of the bread, or dry it out, so that it becomes a cracker.
* Za'atar is a thyme-based seasoning mix, for which there are many recipes, and several commercial versions available. For the feast, a commercial version called "Za'atar Halabi" was used, containing: Thyme, sesame seeds, sumac, anise, coriander, and fennel.
