Cucumber and Feta Cheese Salad
SERVES 6
2 Cucumbers Peel the cucumbers, then cut in half lengthwise. Scrape out the seeds, and then chop.
12 Greek style (Kalamata) Pit the olives (if not already pitted) and roughly chop.

3 Scallions Chop both the green and white parts.
4 oz Feta cheese Crumble the cheese.
1 T Fresh Dill If using fresh, rinse and chop the dill.
(or use 1 t dried)
Combine the ingredients.
1-2 T Red wine vinegar Add to taste.
Garnish with dill.
