๐ Instructions:
Day One
1๏ธโฃ Starter:
Add 60 g (1โ2 cup) of whole wheat flour and 60 g (1โ4 cup) of water to your sourdough starter jar. Mix with a fork until smooth; the consistency will be thick and pasty. Cover with plastic wrap or a lid, and let rest in a warm spot, about 23-24ยฐC for 24 hours.
2๏ธโฃ Day 2:
Bubbles? Do you have bubbles? If there are, that's amazing! However, itโs normal if you donโt see any; the bubbles might have appeared and dissolved overnight. For day 2, you are basically done! You can stir it once or twice to โoxygenate the mixture.โ
But wait! If you see brown liquid, donโt worry โ it's completely normal. It just means your starter is hungry. Before you "feed it," pour this liquid out.
3๏ธโฃ Day 3-7:
If there are bubbles or not, itโs time to start the ongoing feeding process!
"As the natural yeasts develop, your starter will rise, and bubbles will form on the surface. Eventually, it will collapse, signaling itโs time to feed again. The goal is to increase the total quantity to about 236g, following the feeding ratio below."
4๏ธโฃ Day 7-8:
By now, your starter should have doubled in size, be full of bubbles, and smell amazing! Itโs active! Move your starter to a new jar if needed, and you're good to go! ๐
5๏ธโฃ Making the Actual Bread! ๐
Squish the mixture together with your hands until the flour is fully absorbed. The dough will feel dry, rough, and shaggy. Cover the bowl with plastic wrap or a damp kitchen towel, and let it rest or "autolyse" for 30 minutes to 1 hour.
After the dough has rested, return to the bowl and work it into a ball (it doesnโt have to look perfect).
Note: If you want to add inclusions like olives, fresh herbs, or cheese, add them before forming the ball!
Remove the dough onto a lightly floured surface.
Cut the dough in half to make 2 loaves, or leave it whole for a single loaf.
The next step: bake it! ๐
Use a Dutch oven or any oven-safe pot that can heat up to 232ยบ C. This helps trap heat and moisture, which is key to creating artisan-style bread at home!
Coat the bottom of your Dutch oven with cornmeal. The dough will rise for 30 minutes to 1 hour until it's puffy and no longer dense. Preheat your oven to 232ยบ C as this happens.
Before placing the dough in the oven, make a 2-3 inch slash down the center of the dough to help it rise and expand.
Place the lid on the pot, reduce the oven temperature to 204ยบ C, and bake for 20 minutes. After 20 minutes, remove the lid. The bread should look pale and shiny! Continue baking for 40 more minutes until golden brown.
The internal temperature should read 96-98ยบ C.
Cool on a wire rack for at least an hour before slicing. ๐โจ Be patient โ cutting too soon will make it gummy! ๐
