PASTIES
Pasties are a meat-and-vegetable-filled meal wrapped in puff pastry. This hand-held meat pie was created as lunch for workers in England's tin mines. In London around the 1350s, prisoners were served pasties during their imprisonment, though these often contained rabbit instead of beef.
In the late 18th century, Britain sent the First Fleet of 11 ships to Australia, carrying British convicts tasked with establishing a European settlement on what is now Australia. Since prisoners were accustomed to eating pasties during their incarceration, they continued so in Australia, contributing to its status as an iconic food in the country, where convict heritage remains a significant part of history.

INGREDIENTS
1 Egg
1tsp Himalayan Pink Salt
1tsp Garlic Powder
10oz Mixed Vegetables
16oz Ground Beef
2 Ready-to-Bake Puff Pastry Sheets
FOOD SUBSTITUTIONS
A substitute for ground beef, if you want ultra-traditional Australian pasties, would be rabbit meat.
If you would like to season your ground beef with other spices, do so, as it will only taste better.
Preheat oven to 400°F | Line two baking sheets with parchment paper and set aside.
Step One:
Take the pastry out of the box and let it thaw while cooking the meat and frozen mixed vegetables.
Step Two:
Cook the ground beef at heat 6 until brown.
Step Three:
While the ground beef is browning, add a teaspoon of garlic powder.
Step Four:
While the ground beef is browning, add a teaspoon of Himalayan pink salt.
Step Five:
Once the ground beef is done cooking, add the frozen mixed vegetables.
Step Six:
Cook the frozen mixed vegetables on medium heat with the ground beef.
Step Seven:
Create the eggwash. This is done by whipping the egg with a fork.
Step Eight:
Slowly peel apart the pastry sheets and flip the flour side to face down.
Step Nine:
Cut the pastry sheet into four equal quarters.
Step Ten:
Use a spoon and scoop the filling twice into each square.
Step Eleven:
Slowly pinch the bottom right and top left corners of each square and pinch the pastry closed.
Step Twelve:
Once the pasties are pinched closed, use a pastry brush to lightly apply the eggwash.
Step Thirteen:
Place the pasties into the oven and bake at 400°F for 20 minutes.
Step Fourteen:
Take the pasties out and let them cool for five minutes.
Step Fifteen:
Dish and serve the pasties. They are ready to eat!
BONUS TIPS
○ You will have leftover pastie filling; you can save it and add it to your salad, pasta, rice, or even eat it on its own.
○ If you want to have dessert with your pasties, use your leftover pastry sheets and spread Nutella using the same cooking process as you ○would for regular pasties.
○ If you want a healthier dessert, you can always add strawberries or a banana with the Nutella and turn it into a fluffy crepe.
○ Tomato and BBQ sauce is what True Blue Australians use to dip their pasties into. But if you’re an Aussie living in America, I’d recommend ○giving ranch dressing a try; it’s surprisingly delicious.
○ Leftover pasties are best served cold.
Growing up in Australia, I was lucky to live just a couple of blocks away from my grandma and grandpa. Every weekend, I would head over to their house, where my grandma made me chicken nuggets and potato wedges with tomato sauce (ketchup) for dinner. We always ended the night with vanilla ice cream topped with rainbow sprinkles while watchingThe Sound of Music.
As I got older and my taste buds grew more adventurous, my grandma began making me pasties. To this day, I’m convinced I’ve eaten more pasties than eggs on toast, that’s how much I love them.
Food has always been the bridge connecting me to my grandparents, especially my grandma. When my family moved to the United States, my dad told me it might be the last time we would be with my grandparents. I remember crying at that thought, as I can't imagine a life without them.
Making pasties now isn’t just about loving the taste, it’s about connecting with my grandma and grandpa and remembering the countless dinners and sleepovers I shared with them. I still send my grandma photos whenever I make pasties, or even when I treat myself to vanilla ice cream with rainbow sprinkles at Waldy's.
The love my grandma has for me is truly magical, and I’m so grateful to have experienced it. I feel especially lucky because, in my eyes, she will always make the best pasties in the world, and she always gave me a Freddo Frog once I had buckled my seatbelt, knowing how much I never wanted to leave her house.
