ANZAC BISCUITS
The word Anzac stands for, Australian and New Zealand Army Corps. Anzac biscuits were invented during WW1 and were used as a non-perishable food item that could provide energy for soldiers in Gallipoli. They are eggless sweet biscuits made from oats and golden syrup. From the 1920s onwards, Australian recipe books always included Anzac biscuits, but they are no longer how they used to be during the First World War, as they no longer have the shelf-life. It is tradition in Australia to commemorate the Anzac soldiers by making Anzac biscuits every year on April 25. There are countless arguments about whether the Anzac biscuit is served crunchy or soft, so let's find out together!

INGREDIENTS
4oz Unsalted Butter
3½oz Golden Syrup
1tsp Baking Soda
3½oz Old Fashioned Rolled Oats
5½oz All-Purpose Flour
2½oz Light Brown Sugar
1oz Unsweetened, Finely Shredded Coconut
AMERICAN SUBSTITUTIONS
A substitute for Golden Syrup is Corn Syrup. If you want to have a healthier option, use natural honey. Amish Clover Honey was used in this recipe as a substitution. Use the same amount as listed above.
Preheat oven to 325°F | Line two baking sheets with parchment paper and set aside.
Step One:
Pour butter into a mixing bowl.
Step Two:
Pour honey into the same mixing bowl.
Step Three:
Mix the butter and honey at speed 2 for two minutes, and then put it in the microwave and melt until it is golden and runny. Mix again at speed 2 for one minute.
Step Four:
Add baking soda to the mixture and mix at speed 3 for five seconds.
Step Five:
Add brown sugar to the mixture.
Step Six:
Add all-purpose flour to the mixture.
Step Seven:
Add rolled oats to the mixture.
Step Eight:
Add coconut flakes to the mixture.
Step Nine:
Mix all the ingredients at speed 4 for 20 seconds.
Step Ten:
Use a cookie scooper or a heaping tablespoon and roll the mixture into circular balls. Place them 1inch apart and gently flatten them.
Step Eleven:
Bake for 8-10 minutes at 325°F or until golden brown.
Step Twelve:
Let the ANZAC Biscuits cool for 5 minutes and enjoy!
BONUS TIP
If you want to make larger ANZAC Biscuits, add a double scoop to every roll mixture and then flatten it out. This will create twelve ANZAC Biscuits, but they will become larger.
If you want a crunchy ANZAC Biscuit, leave it in the oven for an extra five minutes, and it will become even more golden.

Mix the butter and honey at speed 2 for 2 minutes.
Melt the mixture in the microwave until it is golden and runny.
Mix again at speed 2 for 1 minute.
Add the baking soda and mix at speed 3 for 5 seconds.
Add the brown sugar to the mixture.
Add the all-purpose flour.
Add the rolled oats.
Add the coconut flakes.
Mix all ingredients at speed 4 for 20 seconds until well combined.
Using a cookie scooper or heaping tablespoon, roll the mixture into balls. Place them 1 inch apart on the prepared baking pans and gently flatten each ball.
Bake for 8-10 minutes or until golden brown.
Let the biscuits cool for 5 minutes before enjoying!
