Its not everyday that I can find a modern TieGuanYin that actually develops a long lasting aftertaste. One of the most fruity tasting Tie Guan Yin I have ever had to date. When I first tested this tea I drank about 150 grams straight. And I found that the flavor changed dramtically depending on who brewed it. It is a tea that I would describe as having a high skill cieling. My friend that I had brew this tea prepared it so wonderfully that I found myself yearning to drink it again. And so I strive to share this tea with friends to imitate this experience again.

Spring 2023 Roasted DongDing

Description:

This tea is one that can shine under many different conditions. Brew it really strong (1:10, 1:7 ration), or brew it lighter (1:12 and above), this tea will transform accordingly. When brewed strong it tastes very fruity, in a sort of apricot kind of way. When brewed lighter its not tasteless, not obvious, but there is still a subtlety that lingers in the throat that is pretty pleasant. If you have tried many Dong Dings you will find that over roasted and completely unbalanced teas are common, so i'm happy to offer the Dong Ding that can excel in the aftertaste category.

On Roasted Dong Ding:

When I first traveled to Taiwan I was under the impression that I preferred heavier teas and was not so much a fan of High Mountain Oolong. After learning that Dong Ding Tea's are traditionally roasted a bit heavier I found myself buying a lot of random Dong Ding tea. Although, many of the teas did not scratch the itch that I was looking for within the roast. After learning to focus on the Aftertaste (Yun) of the tea, I finally learned how to find and appreciate well roasted teas.

Theres a saying that every price has that price's good tea. Every tea has a price tag, there is 2 dollars a gram good tea, there is 10 cents a gram good tea. Always evaluate a tea with its price tag in consideration. This tea is a very budget friendly tea that is good for its price.
