Ingredients:
- 2 cups of granulated or crystallized sugar (~400 grams)
- 2 tablespoons corn starch
Steps:
Sift your cornstarch.
Breakdown any major clumps of sugar, to ensure the best result.
Blend the cornstarch and sugar in a blender or food processor on pulse. Do not put the sugar and cornstarch to blend for a long duration, as the sugar will burn.
Check if your sugar is powdered. If so you can take it off the blender. If not, keep blending.
Add more corn starch if you think the icing sugar is not binding properly.
Your icing sugar is now complete!!
For later use, store the icing sugar in a air tight container at room temperature.

Ingredients:
- 1/3 of a cup of heavy cream
- 1 cup of chocolate chips
Steps:
Pour the heavy cream onto the chocolate chips.
Put this mixture in the microwave for 30 second intervals.
After the first 30 seconds, give a light 10 second mix.
Put the mixture in the microwave for another 30 seconds.
Mix more vigorously. In the starting you will get a light brown colour, but after mixing, you will acheive a silky brown colour.
Put this mixture back in the microwave if you still see some clumps.
Repeat step six until your mixture is smooth. This step will vary for everyone, as every microwave is different.
If you are using this ganache for a drip cake, let it cool at room temperature for 5 minutes, then put it in the fridge for an additional 5-10 minutes. This will ensure that your ganache does not melt the buttercream off you cake. If you let your ganache sit in the fridge for too long, and it is no longer in it's silky consistency, put it back in the microwave for 30 seconds.

Ingredients:
- American Buttercream (if you are vegan, this recipe does contain a vegan method) -- https://youtu.be/ljSo8Gt_BFM
- Vanilla cakes -- https://youtu.be/CXi7E-rn6cg
- Simple syrup -- https://youtu.be/Nq1qMBcZdGU
- Sprinkles -- https://youtu.be/RfxeYqbFikg
- OPTIONAL - Rice Krispies Recipe -- https://youtu.be/7Ajv3yinppU
Materials:
Cake turn table or a Lazy Susan
Cake board
Offset spatula, straight spatula or a butter knife
A cake bench scraper
Piping tip (preferably a 1M piping tip)
A piping bag or ziploc bag
Steps:
Put your cake board on your turn table.
Place a dollop of icing in the middle of your cake board.
Add the first layer of your cake and position it in the centre of your cake board.
Apply icing to the top of your cake layer.
Add another layer on top (this can be a cake or rice krispy layer).
Repeat steps 4-5, until you have reached a desired cake height. If your cake is higher that four layers, I would recommend using supports in your cake.
You are first going to apply a crumb coat to your cake. To do this apply icing to your cake, but not too much. There should still be some cake visible. A crumb coat was created to lock the crumbs in the cake.
Freeze the cake for 15 minutes.
Next, add a generous amount of icing, until you have icing on all sides of the cake. After this step, all of the cake should be hidden in the icing.
Using your spatulas, butter knife or bench scraper, scrape off all the excess icing on the side of the cake. To do this position your tool to touch one side of the cake. Turn the turn table (not your hand), until you have reached your desired smoothness.
For the top, scrape the excess icing into the middle of the cake.
Freeze the cake for 15 minutes.
Place icing on the sides of the cake.
Now you can use different designed combs, to design the sides of your cake.
Decorate your cake, in anyway you like. You can watch my cake decorating video, (https://youtu.be/D_4UfHUWZmI) if you are looking for any ideas.
After decorating the cake, freeze it for 10 minutes. This ensures that none of your cake decorations will melt from heat. After freezing it, serve the cake.

Ingredients:
- 1 cup Vegan Butter
- 1/4 cup Aquafaba
- 2 and a half to 3 cups of icing sugar (also known as powdered sugar or confectioner's sugar)
- 1/2 a teaspoon of vanilla extract
- 1/4 teaspoon of lemon extract
Materials:
Stand mixer or an electric hand mixer
Mixing bowl
Spatula
Steps:
Beat the vegan butter using an electric mixer, or a stand mixer until it is creamy.
Add in the aquafaba, until the mixture is well combined.
Add in the icing sugar (small portions at a time, so you can avoid pressure on your machine, icing sugar clouds, and pressure in your bowl).
Scrape the sides of the bowl using a spatula. This will ensure that no icing sugar is left on the sides of your mixing bowl.
Add the vanilla and lemon extract.
Keep whipping the buttercream until you have the desired amount of fluffiness. Keep ub mind that the longer you whip, the more fluffy your buttercream will get.
Your vegan American buttercream is now complete!! If you are saving this buttercream for a later use, store it in an air tight container. If you do not have an air tight container, cover the top of your mixing bowl with cling wrap. Add food colouring or food gel, if you want a coloured buttercream.
