- 37 grams of aquafaba (chickpea water)
- 1/4 teaspoon of cream of tartar OR white vinegar (optional)
- 55 grams of almond flour
- 55 grams of icing sugar

Colour your buttercream to make the macarons look more interesting.
Procedure -
Sift and mix together the almond flour and icing sugar.
In another bowl, whip the aquafaba using a stand mixer or an electric hand mixer until foam appears.
Add the cream of tartar and continue to whip until you reach stiff peaks.
Gradually add the caster or granulated sugar and whip until you reach stiff peaks.
Fold the meringue and dry ingredients together (for detailed instructions view the video to see the macaronage process).
Put this into a piping bag, and pipe the batter onto a silicone mat or onto parchment paper.
Add sprinkles on the top of some of the shells (optional).
Let the shells dry and then bake them. I baked mine at 255 degrees Fahrenheit, but the baking temperature varies on the type of oven. Rotate the tray every five minutes for even baking.
Cool before applying the buttercream onto the cookies.
Best served the next day.

Troubleshooting tips-
- If your macarons melt, it is likely because you over-mixed the batter or the oven temperature is too hot.
- If there are no feet, the oven temperature is too low.
- If it comes out bumpy, then the ingredients were likely not sifted or the batter is under mixed
- If only half of the macaron has feet, that means you did not rotate the tray in the oven every five minutes while the macarons were baking
- If the cookies are hollow, it is because you let the cookies rest for too long or the oven temperature was too high or too low
- If the top of your cookies are cracked it is because the oven temperature is too low or the shells didn't dry for long enough

- 1/2 a cup of brown sugar (DIY brown sugar -- https://youtu.be/CQTWhxq-vNo)

- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 3 tablespoons of cocoa powder
- 1 teaspoon of baking powder
- 1/4 teaspoon salt (or a quarter teaspoon of white vinegar to get a more rich red velvet taste)
- Red food colouring
- Melted white chocolate to drizzle on top for decorating (optional)
Don't forget to let the cookies cool for 10 minutes before eating!! :)
Tips:
- If your oven's temperature is too high or too low, and the cookies do not melt, place them in the oven flattened (not scooped in balls), they will still have the same delicious taste. :)
- If you do not want to drizzle chocolate on top, you can eat as is or add half a cup of chocolate chips into the dough before baking

Ingredients:
2 and a quarter cups of all-purpose flour
1 and a half cups of granulated sugar
1 cup of unsweetened cocoa powder
1 cup of unsweetened applesauce
Half a cup of vegetable oil

Steps:
Mix all the wet ingredients together (applesauce, butter, sugar, oil and vanilla extract).
Mix all the dry ingredients together (all-purpose flour, cocoa powder, salt, and baking powder).
Mix the wet and dry ingredients together. Make sure to scrape the sides and bottom of the bowl with a spatula, so that everything is well incorporated.
Chill this dough in the fridge for two hours.
Roll the dough into balls, using an ice cream scooper.
Roll the dough in you hands to get a spherical shape.
Coat the cookie dough ball into the icing sugar.
Line your cookie trays with parchment paper and place the cookie balls on it roughly one inch apart.
Preheat you oven to 350 degrees, and bake the cookies for about eight to ten minutes.

3 1/2 cups all-purpose flour
1 cup of melted butter
6 cups shredded carrots
2 cups of brown sugar
12 tablespoons of non-flavoured yogurt
3/4 of a cup of milk
4 teaspoons ground cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)
1 and a half teaspoons salt
2 teaspoons vanilla extract
1 teaspoon baking soda
1 tablespoon baking powder
Steps:
Mix all the wet ingredients together (butter, sugar, yogurt, milk and vanilla extract).
Mix all the dry ingredients together (all-purpose flour, cinnamon, nutmeg, salt, baking soda, and baking powder).
Mix the wet and dry ingredients together. Make sure to scrape the sides and bottom of the bowl with a spatula, so that everything is well incorporated.
Mix the carrots in the batter.
Line your pans with parchment paper and grease them with oil or butter.
Bake the cakes at 350 degrees for about 45 to 50 minutes.
Let your cake cool for 10 minutes in it's pan.

INGREDIENTS:
4 and a half cups of all-purpose flour
3 cups of sugar
1 and a quarter cups of cocoa powder

Steps:
Preheat your oven to 360F or 180C. Grease and line with parchment paper two eight-inch pans or three 6 inch pans. You can also grease and add flour or cocoa powder to your pans, instead of using parchment cut-outs.
In the large bowl, mix your dry ingredients, flour, sugar, cocoa, baking soda, baking powder and salt.
In a separate bowl, beat together the apple sauce, milk, vegetable oil. Beat until smooth.
Stir in boiling water. Do not worry if your batter is runny, as it is supposed to be.
Pour batter evenly between the two pans and bake for about 30-35 minutes.
Let the fresh cakes cool for about 10 minutes before removing them from their pans.
Once cooled, you can serve the cake, or decorate with vegan American buttercream (American Buttercream recipe here ---https://youtu.be/ljSo8Gt_BFM).

Ingredients:
- 3 cups of ground Oreo's and/or Fudgee-o's
- 1 to 1 and a half cups of milk
- 3 teaspoons of baking powder
Steps:
Break the cookies in halves or quarters.
Grind the Oreo's and Fudgee-o's using a food processor or blender. You can also put the cookies in a ziploc bag, and crush it using a rolling pin.
Once your cookies are finely crushed, mix in the baking powder.
Once you have that mixed, mix in your milk. I mixed it in, in portions, to make it easier on my arm.
Grease your pan with butter or oil. Add parchment paper to your greased pan, and make sure you grease that too.
Bake this cake at 350 degrees F for 25 to 30 minutes.
Let the cake cool before removing it from the pan.

Sieve and whisk the dry ingredients together.
In a separate bowl, mix all the wet ingredients together.
Now combine and mix the wet and dry ingredients together.
Line your muffins tin with the muffin liners.
Pre-heat the oven to 250 degrees.
Pour the batter into the muffin tray approximately two thirds full per muffin liner.
Bake for 30 - 35 minutes.
Once your muffins are baked, let them cool for 10 minutes.
Squeeze or brush on your simple syrup to your cupcakes.
Put the cupcakes in the fridge for 5 minutes and serve!!

Preheat your oven to 350 degrees F.
Grease your pans with butter or oil. You can also line your pans with parchment paper.
Pour your batter into the pans.
Put your pans (that have cake batter in them), in the oven for 30 to 35 minutes. Make sure you check on your cakes, as every oven is different.
Check if your cakes are ready using a toothpick, or if it bounces up after you press on it, or if the sides are curling off the pan.
Let the cakes cool on a cooling rack for approximately 10 - 15 minutes.

Put a cling wrap on top of the bowl.
Chill the dough for one hour in the fridge.
Take the dough out of the fridge after one hour.
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius)
Put parchment paper in a cookie tray.
Roll small balls of cookie dough (put them 2 - 4 centimeters apart from each other) onto a cookie tray.
Put the cookie tray into the oven for about 10-15 minutes.
Take the cookies out when they are ready.
Let the cookies cool for 5 minutes before touching them.
