The researchers from UdL-ES involved in this project proposal are part of the Department of Food Technology, Engineering, and Science, with a specialization in Novel Technologies for Food Processing. Their focus is on developing technologies that ensure food safety while preserving nutritional and sensory properties. They work on improving the preservation of plant-based products and extracting bioactive compounds from by-products of fruit and vegetable processing industries. The UdL-ES team's expertise aligns with the project's goals related to bio-packaging solutions, film and coating characterization, and application to traditional Mediterranean food products for improved shelf life and functionality. UdL is a renowned research institution in Spain, particularly within the agriculture and food technology domains. The Department of Food Technology, Engineering, and Science focuses on technologies for food safety, preservation, and value addition. Their expertise is aligned with the project's objectives related to bio-packaging, film characterization, and application in traditional Mediterranean foods.

The UGR is also home to a number of research institutes and centers. The research group FQM-297 "Environmental, Biochemical and Foodstuffs Analytical Control" offers expertise in metabolomics and food sciences and is a significant contributor to food characterization, authentication, and valorization. Their approach focuses on understanding the physical, chemical, and biological factors that influence food quality and authenticity. Specific skills include metabolomic characterization of food, assessment of agro-technological parameters on food composition, selective isolation of bioactive compounds, and bioavailability studies.
