Vegan Samoan Oka

Most of the ingredients are raw and are very good to boost the immune system and energy levels anytime or when feeling sick with the cold or flu.

Ingredients:

1 can of Worthington Loma Linda vegetarian scallops

1 green or red chilli pepper, finely diced

1 stalk celery, finely diced

1 cucumber, finely diced

1 medium or large tomato, finely diced

1 medium onion, finely diced

1 red onion finely diced

1 stalk of green or spring onions, finely diced

1 can coconut milk

1 medium or large lemon

2 cups of water

1 tsp salt

1⁄4 tsp cayenne pepper

3 cloves garlic, minced or chopped fine


Directions:

1. Cut up vegetarian scallops into small cubes or pieces

2. Place in a medium or large salad bowl

3. Add finely chopped onions, garlic, chilli pepper, and tomatoes

4. Add in the coconut milk

5. Add lemon juice

6. Add cayenne pepper

7. Add salt (adjust to taste)

8. Add 2 cups of water

9. Stir well all ingredients to mix with coconut milk and seasonings

10. Cover and chill in refrigerator before serving


Serve with either baked taro or baked green bananas or baked breadfruit
