Salaw Machu

There are different types of Salaw Machu, the one featured here is a sour Cambodian soup made with curry paste known as Kroeung.

Ingredients:

  • Kroeung (see below)

  • Meat of your choice

  • Prahok

  • Vegetables of your choice

  • Tamarind powder

  • Fish sauce

  • Holy basil

First you need to make the curry paste, or Kroeung. Pound the following ingredients into a paste:

  • Lemongrass

  • Galanga

  • Garlic

  • Shallot

  • Salt

  • Pepper

  • Turmeric

  • Makrut lime leaf

Then, chop up your choice of meat (Nuan's favorite is beef!)

Heat up a pot with a little bit of oil to sautee a little of the kroeung. Add the meat and sautee for about 15 minutes. Add some prahok (or pound it beforehand into the curry paste). Add water to cover the meat and let simmer for another 15 minutes.

Add any kind of vegetables (Nuan suggests round eggplant and kangkong), add tamarind powder and taste for seasoning. Add fish sauce if it is not salty enough.

Turn off the heat and then add holy basil. Now your Salaw Machu is finished!
