The macaroons long journey began with the almond-based sweet in the Middle East, which traveled to Italy and became known as maccherone. From there, the simple almond biscuit migrated to France, where it got its macaron name and version. A major fusion happened when the cookie reached the UK/Americas. In France, chefs developed the modern, colorful macaron by sandwiching two delicate almond shells together with filling. Meanwhile, in countries like the U.S., the recipe was adapted by replacing most of the almonds with shredded coconut. This version then became known as the infamous macaroon we know today.
Pesto sauce originally comes from Liguria, Italy, but its history is shaped by migration and cultural blending. The idea of grinding herbs, cheese, and nuts into a paste again with the ancient Romans, who made a similar sauce. Basil, the main ingredient in this sauce, actually came from India and spread to the Mediterranean through early trade routes. Genoa, a major trading city, was influenced by many cultures, including Arabic Cuisine. Later, Italian immigrants carried pesto around the world, leading to even more variations.

U.S. Connection
Pesto sauce came to the US through Italia immigration in the late 1800s and early 1900s, when many familis from Italy brought their traditional recipies with them. People from the Linguria region, where pesto was created settled in American cities and continued cooking the foods they knew from home. As these communities grew, Italian resturants began serving dishes like pesto pasta, introducing the sauce to Americans. Which is how pesto sauce made its way into the US
Macarons were first made in France, and they came to the United States through French immigrants who brough their baking traditions with them. I the 1900s, oe French bakeries began opening in American cities, and they introduced Americans to these small, colorful cookies. Later as people traveled more between these two countries, tourists tastes macarons in France and wanted them back home. And this is how macarons were brought to the U.S.

Migration plays a big role in how food spreads form one country tto another, and pesto and macaroons are good exaples. Pesto came from Italy, and macarons came from France when immagrants brought thier recipies to the US. As these foods spread, they change by mixing with new ingredients in America, which shows its convergence. At the same time, they kept some of ttheir original traditionsa nd ingredients, which shows divergence. These two foods show how migration and a numerous of other factors can change a dish but ls some how keep its orginial shape.
