Snow is coming down in heaps. Work let out early so Avery and I made the 70% bread listed below. We also added miso and nutritional yeast. I let it sit multiple times during the initial kneeding to help the autolayse. Initial rise was shortened and final rise was a little short. Good crumb with plenty of air pockets. I think one problem from before was too much time for the initial rise which caused the bread to over inflate and then deflate when it went into the oven.
