Jack fruit ( trái mít) is a fantastic fruit if you could tolerant the pungent smell. Vietnamese people even make chips out of it. Actually, Vietnamese people make different types of desert, salad, soup, stir fried, or smoothie. I love the seeds, arials, tendrils, and even the meaty skin right inside and next to a jackfruit's spiky skin!

Heat oil in a pan. Toss in a clove of garlic. Add the Mexican squash, bell pepper, and tendrils/arials. Add the salt, soy sauce, pepper, tofu (make sure to fried the tofu till it golden brown on all of the sides), and cook for 5 to 10 minutes in medium low heat. Do cover the pan. Stir the vegetable and fruit now and then. Afterwards add green pepper and cilantro and stir it for 1 minute.
You can eat with rice or noodle. I like to wrap it with rice paper with chives and perilla leaves, my spring roll.
