Ingredients:
1 boneless chicken breast - sliced in strips
1 green pepper - sliced thin
1 red pepper - sliced thin
1 large onion sliced thin
1 portabella mushroom sliced
1 package McCormicks Fajitas Seasoning mix
3 Tbsp. water
1 package shredded cheese (Mexican or Chipotle Pepper)
1 package whole wheat flour tortillas
Directions:
Pre-heat oven to 425º.
Stir fry chicken in a little oil for a couple of minutes. Remove from pan, add onion and stir-fry until it starts to soften - about 3 minutes.
Add green and red pepper and portabella mushroom slices and stir fry until ingredients start to soften but aren’t over cooked.
Meanwhile mix fajita mix with 3 Tbsp. water. Return chicken to fry pan with veggies, add fajita mixture and stir fry to heat through - about 1 minute.
Place 1 tortilla on an oven proof flat pan. Cover with 1/3 of the chicken/veggie mixture. Cover with 1/3 of the cheese. Repeat layers ending with a tortilla on top.
Place in oven and bake for 10 minutes
