Ingredients:
Keep in mind that I use individual measuring cups, then scoop and level the flour so there is some compression.
1 1/2 cups of water
2 Tbs. of olive oil
2 Tbs. molasses (I use a 1/3rd cup and half fill it with oil then the molasses because it is easier! )
1/2 cup Quaker Oat Bran hot cereal. (It comes in a small red box and is finely ground)
1/2 cup white flour
2 cups whole wheat flour
4 Tbs. gluten
1 Tbs. potato flakes (optional)
1/2 tsp. salt
1 tsp. yeast
Directions:
Use a bread machine.
Start with the 1/2 cup.
Put in 1/2 cup oat bran and 1/2 cup white flour
Add 1 1/2 cups water
Add 2 Tbs. oil and 2 tablespoons molasses (I use a 1/3 cup filled about half full with oil and then finished with the molasses)
Add 2 cups whole wheat flour
Add Tbs. potato flakes
Add 4 Tbs. gluten
Add 1/2 tsp. salt
Add 1 tsp. yeast
Use the 1 1/2 pound, white bread setting
Check the bread as it mixes for the first 10 minutes or so. If it seems very dry after 5 minutes slowly add 1 tablespoon water. If it is very sticky and sticking to the sides of the pan add 1 tablespoon white flour.
