Here is how to highlight in Word and insert comments (margin notes).
Why? You might not have a printer at home...You can save your info and you won't lose it!
Why? How would you feel if you came up with a new innovation in the culinary field? What if someone else stole your idea and took credit? You don't want to steal! If you don't correctly cite both quotes and information you put in your own words, you are stealing from the author.

Below is a note matrix. It's a beautiful strategy because it can also become the body of your outline! You can move columns to reorganize if you wish! Just add a column for intro and one for conclusion.
What is this sandwich thing? Why should I care about it?
The sandwich strategy helps your reader know where source info. begins and ends. It makes citation clear. What if your chefs found something in your paper that was so fascinating that they want to learn more and include it in a lesson? Your citation (in the text of your paper) and the works cited entry make it easy to find your original source info so they can use it and cite it!
