Vegan Burrito Bowl

Creamy Black Beans:

  • 15 oz can black beans (rinsed)

  • 1 heaping tsp vegan bouillon

  • 1 tsp onion powder

  • 2 T vegetable stock

- Place beans, bouillon, onion powder and vegetable stock in blender. Blend until creamy.

  • 1 cup chopped romaine

  • 1/2 cup cooked rice

  • 1/2 cup chopped tomato

  • 1/2 cup chopped cucumber

  • 1/8 cup chopped red onion

  • 1 dollop of Creamy Black Beans

  • 1/2 avocado, chopped

- Add all ingredients into a bowl and drizzle with your favorite hot sauce or taco sauce. Add some tortilla strips for a bit of crunch. Other topping ideas include fire roasted corn, salsa, jalapeños or cashew sour cream.
