Sweet potato-apple bake
6 cups thinly sliced peeled sweet potato (about 2 pounds)
3 cups sliced peeled Granny Smith apples
1/2 teaspoon salt, divided
3 tablespoons maple syrup
2 tablespoons butter, melted
Coat a 8 to 10 inch square microwave safe casserole dish with cooking spray.
Arrange 3 cups of sweet potato slices and 1 1/2 cups of apple slices in the
casserole dish; sprinkle with 1/4 teaspoon salt. Combine maple syrup
and butter, stir well. Drizzle half of the syrup mixture over the potatoes
and apples. Repeat procedure with remaining ingredients. Cover dish
with plastic wrap. Microwave at HIGH for 10 minutes, rotating half
a turn after 5 minutes. Let stand, covered, for 5 minutes.
Yield: 8 servings (1/2 cup size serving)
