1/4 cup butter
4 eggs
3/4 cup all purpose flour
3/4 cup milk
1/4 teaspoon salt
2 medium baking apples, peeled and thinly sliced
3 Tablespoons sugar
1 teaspoon cinnamon
Preheat oven to 400 degrees.
Divide the butter equally between two 9 inch pie plates. Put them in the oven to melt the butter. Swirl the pie plates to evenly coat the bottom and sides.
Beat the eggs, flour, milk and salt on medium speed for 1 minute.
Divide the apple slices between the two pie plates.
Divide the batter and pour over the apples.
Mix the sugar and cinnamon together. Sprinkle evenly over the batter in each pan.
Bake until puffed and golden brown, about 20 to 25 minutes.
Serve immediately with maple syrup.
