Rhubarb Chutney

100 g Ginger grated

750 mL Cider Vinegar

2 tsp salt

1 kg Onions diced

xxxx

500g Sultanas

teaspoon mustard

5 chillies

xxx

1500g Rhubarb


Mix first 4 ingredients, boil 10 minutes covered

add next three ingredients boil a bit longer until onions cooked open

add rhubarb keep cooking open, time depending upon how much the rhubarb should fall apart about 20 minutes
