Important Note + Spoilers
The profile information (with the exception of the receptionist) as well as their personality traits are what is revealed from playing the game (so the following is still missing additional information - which I'll add to as needed.)
Because I haven't played all possible routes yet, some profiles will be limited until I get a chance to play through those. Their real names are only revealed if you get the happy ending. Some ages have an "->" because of the one year in-game time period. All measurements (B/W/H) are in cm.
My phrasing of certain information is also not the best. Many of the characters portray and represent certain archetypes for example; the tsundere, the girl-next-door, the loli, the romantic, the intellect, the ojou-sama, the idol, the athlete, the tomboy, etc. Their personality traits tends to revolve around these archetypes in a stereotypical manner.
This profile information also contains potential game play SPOILERS.
Airi is a prototype android that was created by a Professor Hakase (a female professor that Airi says has big boobs; that's the only piece of information she knows about her creator) for data collection. Airi says the reasons for that are confidential though. She mentions there is much that she still does not understand, and that she hopes her intelligence circuits will learn more by working in this club (her "algorithms" do become more human as the game progresses).
Note: In the Xbox 360 and PS3 version of Dream C Club, Airi unlocks after 30 trophies. On the PSP, she unlocks after 35. She can be purchased as a DLC unlock for ¥1,050
Amane (亜麻音)
Amane is a hostess who is shy, kind, and reserved. She is also a newcomer as a hostess (which is why she is so miserably nervous, stuttering, barely audible, and near tears during the first encounter with her). Setsu asked her to come to work at Dream Club. She also comes from a traditional and strict family. She is also somewhat of a loner because she doesn't have much friends (especially male ones since she attended an all girls school where it was forbidden to socialize with boys). As a result, she day dreams a lot about romance including having a role in a "love&friendship" movie, and is sub-consciously eager to make friends. Ironically, Amane has a fiancé; one that is arranged by her parents though (aka omiai) and one that she has trouble declining.
She is also the "main image" of the franchise (Amane is normally at least one of the host girls shown on the game discs and used in various marketing)
Note: there is an erroneous review about her ending. There are 4 possible outcomes in the Dream C Club games; bad ending, normal ending (where you become just best friends), happy ending (where the hostess declares their actual love), and no ending (when you run out of time from not completing all events and getting key items which leads to an outcome). She does have an actual happy ending where she selects the protagonist over her fiancé.
Happy End for Amane:
Asuka (あすか)
Asuka is a professional beach volleyball player (thus the tan) who has been avoiding undergoing rehabilitation for a left foot strain (out of fear it may end her playing career). During game play, she won't hesitate to give the protagonist a good slap when given an inappropriate response. Asuka was added in Dream C Club Zero.
Haruka (遥華)
Haruka is an ojou-sama (wealthy high-class female) who comes from a wealthy family and has lived a life of privilege. She supposedly chose to work as a hostess to prove she can be independent and not have to depend on her families money, but in reality, she is oblivious about such things where she even has two body guards (Smith and Wessun) that accompany her all the time. Overall, she is fairly self-centered and selfish and it is because of these reasons, that her father (the head of Mikado Group) sent her to work at Dream Club to learn about the world around her. During early game play, she often time expresses how bored she is and asks the protagonist to entertain her. She is voiced by a veteran seiyuu and JPOP singer (part of Haruka's look was modeled after her voice actress). Haruka was added in Dream C Club Zero.
Mari (魔璃)
Mari is the girl with the mysterious personality and is nicknamed "Bloody Marilyn" by club patrons. She talks about the world in dark terms and goes on about how her soul wanders the darkness since she is an occultist. She is the lead singer of an indies band where she uses the stage name, Maririn. Her eccentric and chuunibyou personality is one reason she wears an eyepatch (this can be removed as an unlock in Dream C Club Zero and Mahjong) and not because there is something wrong with her eye. Essentially, much of Mari is a facade (in the sense that she presents herself with this quirky dark image, but as the lyrics of her character songs reveal, she is really a romantic at heart).
Note: In the Xbox 360 and PS3 version of Dream C Club, Mari unlocks after 35 trophies. On the PSP, she unlocks after 40. In Dream C Club Zero across all platforms, she unlocks after 35 trophies. She can be purchased as a DLC unlock for ¥1,050
Mian (魅杏)
Mian can be considered the most tsundere out of all the club hostesses. That's how she starts when you first meet her (constant frown/glare). She doesn't hesitate to get angry with the player/protagonist (calling you a hentai idiot and threatening to hit you) and admits she is difficult to get along/not good at socializing with when first meeting her. She non-reluctantly (out of a sense of being responsible) helps out with the family business (butcher) which also has a reputation for good croquettes. She admits in one conversation that she was teased about being the daughter of a butcher while going to school. While she often times has a hard exterior, she really is a caring sweet heart when she shows her soft side.
Mio (みお)
Mio reveals that she is an inventor from Kyoto (which explains her use of Kansai-ben dialect throughout the game; like using okini (おおきに) to thank you. Most of her inventions have been continuous failures though. When drunk, Mio gets really chattery and often times sings with her own added sound effects. In Club Zero and Mahjong, you are able to remove her glasses. She confesses in one conversation that her eyesight is so terrible that without them, she easily mistook a piece of chocolate for her phone (she accidentally tried to eat her phone.)
Nao (ナオ)
Nao states she has a tomboyish nature (her habits and the way she speaks in game are also boyish.) She is a university student and also works at a dojo (a martial arts training hall) as an assistant.
Many of Nonono's conversations have references to the future (未来 = mirai). As it turns out, she is a time agent from the future and is supposedly an expert "Ancient Culture" Researcher. One of her objectives seems to be to try and matchmake you the player, with the perfect female. In some conversations, she alludes to the fact that there are "male museums" (with plenty of fossil specimens) in the future but has to stop herself from revealing the reason why (it seems males aren't needed in the time period from which she comes from). She is also an airhead that likes any kind of alcohol (her character is great when drunk). Nonono also has a red eye scanner gadget (amongst other gadgets that do not exist today) that she occasionally brings up when touching the left side of her head. Her main charm point is her ahoge. Nonono was added in Dream C Club Zero.
Nonono (ノノノ)
Reika is originally from the Kansai area (Osaka) but is now a Tokyo girl. She also represents the "oneesan" (older sister) type of heroine found in anime and games of this genre. She considers herself dependable and down-to-earth (but she can turn into a real spazz when talking about bowling). She practices day and night to become a professional bowler. In one of her conversations, she reveals she has a younger sister (with an oddball sense of humor) who has turned into a hikikomori (and later asks you for help with making a humorous video to try and help getting her sister to become a part of society again).
Riho shares the same name of a popular gravure model (this is in reference to this same character; Riho Futaba, being used in other non-Dream Club D3 Publishing games as an NPC). While it is the same character, she also represents the main idol, entertainer, and model of the DCC franchise as well (where she is working as a hostess to gain experience). In Mahjong★Dream C Club, the support mode character, Makoto Futaba, is supposedly her sister.
Note: In Dream C Club Zero across all platforms, she unlocks after 40 trophies, and she will only be playable from her birthdate (so December 20th in-game.) She can be purchased as a DLC unlock for ¥1,050 but the same December 20th rule applies for when she is available for play.
She will be appearing as a guest character in D3 Publishers new game, Natsuiro High School: Seishun Hakusho (June 2015 for PS3/4).
Riho (理保)
Rui (るい)
Rui works as a high school (all boys) teacher during the day. But she feels stiffled and is often times ridiculed by her own students (she does not care to talk about her school teacher life). She normally dresses plainly so that she doesn't stand out. She works as a hostess as a change from her usual life, and has a goal of becoming a good woman.
Setsu (雪)
Setsu is the "delicious flat chest" loli of Dream C Club. She is well aware that she looks and sounds like a young child (she has a complex about this) to where she has to keep saying she's an adult/not a child. Unfortunately, Setsu often times talks and acts like one during game play. Set-chan can also come across as moody and spoiled in her conversations. She also an onii-chan complex despite not having a brother (she is always calling the protagonist that). One thing she points out is how happy she is to be working with Amane as a hostess in the same club (this is because she was the one who asked Amane to work at the same club as her).
Uketsuke (受付)
The receptionist (受付 - uketsuke is the Japanese word for receptionist) has been an NPC in the franchise but she was finally allowed to be unlocked and used in karaoke in Dream C Club Zero (Xbox 360), Portable for the PS Vita, and Special Edipyon on the PS3. Uketsuke (or Uke for short) is now her actual name.
Note: I began playing the original version of the game for the PS3 (Complete Edipyon) since the routes for completion are easier; there is a dialog (you can talk to her for a short while before entering the club) where the protagonist asks Uketsuke what her interests and hobbies are. I don't remember seeing this particular dialog in Special Edipyon.

Piano, divination (fortune telling), Ikebana (flower arrangement), aroma therapy, appreciation of fine arts/music/movies, tennis, golf, scuba diving, snow boarding, horseback riding, dancing, and mahjong (this makes sense since she is the competitive league play "end game boss" in Mahjong Dream C Club).
