Mom's Amazing Pinwheel Cookies

Dough

8 oz butter

8 oz cream cheese

1 cup sugar      

2 eggs

3 ¾ cups all purpose flour

2 tsp baking powder

2 tsp vanilla

¼ tsp salt

 

Fillings

Raspberry Jam

Nuts, raisins, cinnamon and sugar

Melted Chocolate bits (mixed with 1/4 tsp vegetable oil)

1. In a mixer (or by hand, with a wooden spoon), cream together the butter and cream cheese

2. Add in the sugar, eggs, baking powder, vanilla and flour and mix until combined.

3. Divide the dough into three equal sized balls, wrap in plastic wrap and refrigerate overnight

4. On a floured surface roll out each ball separately into an approximately 9” by 12” rectangle about ¼ inch thick

5. Generously spread the filling of your choice on top of the dough

6. Start rolling the dough from the long side and roll into a log

7. Using dental floss or fishing line (or a very sharp knife) slice the log into quarter inch thick rounds

8. Grease a cookie sheet and place the round cookies on it, about ½” apart

9. Bake at 400° for about 10 to 15 minutes, or until lightly browned
