Cookhacker's Crustless Broccoli Quiche
1 package frozen broccoli, thawed and drained (can substitute 1 package frozen spinach)
3 cups shredded Muenster cheese
5 eggs, beaten
1 onion, chopped
1 tablespoon vegetable oil
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Dash of Frank’s Hot Sauce (too taste)
Preheat the oven to 350˚
1. Lightly grease a 9 inch pie pan or a 2 qt. Oblong Pyrex Baking Dish
2. In a large skillet, heat the oil over medium-high heat until it starts to shimmer. Add the onions, turn the heat down to medium, and cook, stirring occasionally, until the onions are soft and start to take on a little color.
3. Add the broccoli and continue cooking until the excess moisture has evaporated. Remove the pan from the heat and let cool for a few minutes.
4. Combine the beaten eggs, muenster cheese, salt, pepper and hot sauce in a large bowl.
6. Stir in the broccoli/onion mixture and then pour into the prepared pan/dish.
7. Bake in preheated 350˚ oven until the eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
