Classic Chocolate Chip Banana Bread

  • 1/4 cup vegetable oil
  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp. salt
  • 2 eggs, lightly beaten
  • 2-3 bananas, mashed (1 cup mashed banana)
  • 1 cup chocolate chips

Pre-heat the oven to 350°F .

Grease and flour an 8 1/2" x 4 1/2" loaf pan

Whisk flour, white sugar, brown sugar, salt, cinnamon and baking soda together in a large bowl. Add the oil, bananas and eggs and mix until just combined (to keep the cake light, be careful not to overmix). Fold in the chocolate chips and pour into the greased and floured pan.  Bake in the center of the 350° oven for 60-70 minutes, until a toothpick inserted in the center comes out clean. Remove, let loaf cool in the pan for about 10 minutes, then unmold and place on a rack until completely cool.
