Oven Baked Spicy Crispy French Fries

Cookhacker’s Crispy Spicy Oven Baked Fries

  • 2 Tbsp olive oil
  • 3 medium baking potatoes
  • 1 tsp salt
  • ¼ tsp coarsely ground pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½-1 tsp cayenne (to taste)

Preheat oven to 425º F.

  1. Cut unpeeled potatoes lengthwise into quarters, and then cut each quarter lengthwise into 2 wedges. Cut each wedge in half crosswise (see picture) for more surface area and therefore more crispy goodness.
  2. Soak the wedges in cold water for 10-20 minutes (optional, but it definitely adds to the final crispiness).
  3. Drain the potatoes and dry thoroughly with paper towels.
  4. Place the potatoes in a large bowl and add in the olive oil, salt, pepper, onion powder, garlic powder, paprika and cayenne and toss well until evenly coated.
  5. Place the potatoes in a single layer (not touching each other) on an aluminum foil or parchment-lined cookie sheet (or two, depending on how many you are making).
  6. Place the cookie sheets in the preheated oven, bake for 20 minutes and then turn the wedges over (also, if using more than one pan, switch them between upper and lower racks).
  7. Bake for an additional 15-20 minutes until golden brown and crispy.
