The Never Open Desert Diner by James Anderson

I couldn't put this down, and I think it will draw you in too. The characters are likeable for their histories and their eccentricities. And, as you are drawn into learning more and more about the characters, the plot unfolds. Some of the mystery is in that you start out with a basic protagonist- a truck driver, and as you meet the unique people (a man who owns a diner that is never open, a preacher who literally carries a wooden cross all day long, two brothers who live in a boxcar, etc.) along his route, you learn more about them. The other mystery is in that one of the new to town has people following her. Why are they following her? This book won't disappoint you.
