1/2 cup butter
1/2 cup shasta's canned pumpkin
1/2 egg
1/2 teaspoon vanilla
1/2 cup white flour
1/2 cup wheat flour
1/3 cup firmly packed brown sugar
1/6 cup sugar
1/2 teaspoon pumpkin pie spice
1/4 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
(topping)
1 cup powdered sugar
1/8 cup butter softened
1 1/2 oz cream cheese softened
1/2 tsp vanilla
1/8 tsp pumpkin pie spice
oven: 350, around 8-10 minutes
pan: thin cookie sheet
- makes about 20 cookies (so make them big).
- let them sit on the cookie sheet for 2 minutes before transferring to cooling rack.
- helps to push the powdered sugar through a strainer
- when you freeze them, put a sheet of saran wrap (or wax paper?) in between layers, and freeze each layer for around 10 minutes before adding the next layer. (wow!)
