1 1/2 cup flour
1/2 teaspoon salt
2 teaspoons baking powder
1/4 cup sugar
1 egg
1/4 cup oil
1 cup milk
(topping)
1/4 cup brown sugar
1 teaspoon cinnamon
1 tablespoon flour
3 tablespoons butter
oven: 375, around 25 minutes
pan: 9x9
grease glass pan with light coat of butter.
mix toping, fold butter into the sugar. leave it chunky.
mix dry ingredients. gently scramble egg with oil, then add milk. pour dry on wet and stop stirring when it's still a bit lumpy. pour into greased pan.
sprinkle toppings and bake.
variations:
- use whole wheat flour (1 whole wheat, 1/2 white; or 1 1/2 whole wheat)
- use more butter in the topping so it sinks in more, less to keep the topping on top.
- add crushed nuts in the topping
