1 cup flour
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons sugar
1 egg
1 tablespoon oil
1 cup milk
grill: 275 - 300 (no grease if non-stick, light oil if standard grill) 2-3 minutes per side
makes enough for 2-3 adults
mix dry ingredients. gently scramble egg with oil, then add milk. pour dry on wet and stop stirring when it's still a bit lumpy.
variations:
- use whole wheat flour (1/2 whole wheat, 1/2 white; or 1 whole wheat)
- icing: 1 cup powdered sugar, 2 tblsp butter, 1 tsp vanilla, 1 tblsp milk
