Bollito Misto
It's a fact that having spent much of my 20's as a vegetarian has left me poorly lacking in the department of meat-cooking knowledge. The only thing I seem to excel at is the method I refer to as "simmer it until it falls apart." When I heard there was a traditional, and even medieval, Northern Italian penchant for boiled meats, I went hunting. Unfortunately I wasn't able to find an online translation of Libro de arte coquinaria, so I have wielded my rudimentary knowledge of Italian along with some huge help from Wiktionary and Google Translate to produce this translation.

Per haver ogni carne bella allesso.
Chi vole haver bella carne allesso la deve dividere in pezi come
gli piace, et porla a mollo in aqua fresca per spatio de una hora,
poi lavarla bene con aqua calda, et poi iterum con aqua fresca, et
ponerla al foco in un caldaro dove non stia a stretto aziò che rimanghi
più bianca. Poi gli devi ponere el sale secondo che è necessario,
et schiumarla bene sopratutto; et se il sale non fosse netto,
ponilo in una pocha d'acqua calda, che in breve spatio serrà dileguato,
et converso in salimora, la quale come sia rasectata se potrà
poner nel caldaro pianamente, aziò che non ve andassi la terra, che
serrà sul fondo; et se la carne fusse vecchia et dura, specialmente
cappone et gallina, cavala parechie volte da l'aqua bollente, et
rinfredala ne l'aqua fresca, et in questo modo serrà più bella et più
presto cotta.
My translation
To have every meat boiled beautifully.
Whoever wants to have beautifully boiled meat must divide the weights [of meat]
