Spring Cooking: No Bake Butterscotch and Peanut Butter Birds Nest Cookies

Even though Punxsutawney Phill unfortunately saw his shadow, it is never too early to start thinking about spring! Just imagine - in a few months, we can ditch our coats for sunglasses, trade our piles of snow for plenty of sunshine, and recall barely functioning, frozen cars as an idea of the past. Not to mention - only a few more months to summer and unlimited time to sleep in, and binge watch whatever new show has arrived on Netflix. To kick-start our journey to warmer weather, I thought I would share one of my favorite treats to make for my little cousins during the Easter and spring season.

The recipe is quick and easy and has only four ingredients.

No Bake Butterscotch and Peanut Butter Birds Nest Cookies

Ingredients:

  • ¾ cup butterscotch chips
  • ½ cup smooth peanut butter
  • 2 cups chow mein noodles
  • ¼ cup chocolate eggs (Cadbury mini eggs recommended)

Directions:

  1. Melt the butterscotch chips with the peanut butter in a wide saucepan over low heat. Stir continuously until melted.
  2. Pour the mixture into a large bowl of the chow mein noodles and stir to combine.
  3. Fill up each compartment of a muffin tray with a spoonful of this mixture.
  4. Let cool for 10 minutes and remove from the tray. Be careful when you are removing the nests, as to not break them.
  5. Add in some chocolate Easter eggs.
