Fruity Crumpets
Ingredients
4 crumpets
100g fat-free Greek yoghurt
150g ripe strawberries, hulled and sliced
50g raspberries
50g blueberries
2 big pinches of ground mixed spice
2tsp runny honey
(Serves two)
Method
Toast the crumpets in a toaster, or under the grill, until lightly browned.
Put the yoghurt into a small bowl and stir until glossy.
Place a non-stick frying pan over a medium heat and add all of the fruit. Sprinkle with the ground mixed spice and cook for 1 minute, tossing regularly, until the fruit is softened but still holding its shape. (This will bring out the sweetness of the fruit without needing to add extra sugar.)
Divide the toasted crumpets between two places and spoon the fruit over the top, allowing some of the mixture to tumble onto the plates.
Spoon the yoghurt on top of the fruit and drizzle with the honey. Enjoy!
Big cook, little cook
We were delighted this week to receive an email from the parents of Grace in Ambrosia Class who has been cooking at home. Grace had made an amazing lasagne for her family and the pictures made our mouths water as it looked delicious!
