Course Description:
Introduction to Education is designed to provide students with information and experiences in the field of education. Students will develop a better understanding of themselves as learners, discover a variety of learning styles and approaches to best fit students, learn the role of a teacher, and will participate in a 40-hour practicum. During practicum, they will be allowed to have experiences with various educators, grade levels, subject areas, and ability groups. Students will be responsible for preparing lessons, assisting the teacher with materials, grading, planning, and conducting themselves in a respectful manner. Upon exiting this course, students should have identified areas of special interest that they would like to pursue, have a better understanding of the teaching profession, and have enhanced employability skills which will be of benefit regardless of the occupation or career in which employed. After completing this course, students are eligible to take Education Technology

Course Description:
Education Technology is designed to integrate psychological, sociological, and philosophical foundations, which prepare students for positive field experiences. This course encourages prospective teachers to become responsible, professional, and ethical as they explore the teaching profession. During practicum, students will have 60 hours of field experiences with various educators, grade levels, subject areas, and ability groups. Students will be responsible for preparing lessons, assisting cooperating teachers with materials, grading, or planning, and for conducting themselves in a respectful manner. At the conclusion of this course, students will participate in a simulated teacher-candidate interview.

Course Description:
Child Growth and Development explores human growth and development starting from the prenatal stages and going through adolescent maturation. The course content deals with in-depth theories, practices, trends, and environmental factors that influence the development of children and adolescents, including family dynamics and the role of a child educator. Students are expected to complete field work and observations with a licensed Arkansas teacher in order to observe and record the learning behaviors and dynamics of children in a classroom.

Course Description:
This course focuses on the development of essential food safety practices needed to select, receive, store, prepare, and serve food, as well as the skills needed to select food that meets the nutritional needs of individuals and families. Students will learn to create and implement an environment of food safety procedures based on the latest FDA Food Code and local regulations. This course gives emphasis to the development of competencies related to nutrition, weight control, the food consumer, the effect of technology on food and nutrition, and food preparation skills. With completion of this course, students should be able to apply sound sanitation practices, to apply sound nutritional practices for a positive effect on their health, and food preparation skills necessary in various aspects of the food industry.

Course Description:
Culinary and Restaurant Management I is a one-year course designed to expand students’ knowledge in the culinary arts profession. The course emphasizes the study of kitchen staples, principles of cooking, soups, stocks, and sauces, dairy products, eggs, fruit and vegetables, grains and pasta cookery, meat cookery and principles of baking. Upon completion of this course, students should have attained basic skills needed for entry-level employment in the food service industry, customer relations, purchasing and storage of foods, cooking techniques, and principles of baking.

Introduction to Behavior and Mental Health introduces students to the foundations of mental health, emotional wellness, and human behavior. Students will explore mental health careers, learn how the brain and body influence emotions and behavior, and develop skills for building healthy relationships and managing stress. The course also emphasizes self-awareness, resilience, and ethical decision-making while encouraging participation in leadership opportunities through CTSOs such as FCCLA or HOSA.
