Ingredients
1 1/2 cups all purpose flour
3 tbsp sugar (brown sugar works well too)
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups milk
3 tbsp unsalted butter (melted)
2 large eggs
1/2 tsp vanilla extract
Instructions
Whisk the flour, sugar, baking powder, and salt, in a medium-large bowl
In another bowl, whisk the milk, melted butter, eggs, and vanilla extract
Pour the wet ingredients into the dry ingredients
Use a measuring cup or spoon to pour the batter onto a griddle or pan
Once you see little holes, or bubbles appear in the pancake, flip it, and let it puff up for about the same amount of time before taking it off
Options to make a fluffier pancake
Let the mixture sit for 20-30 minutes, to allow time for the baking powder to react.
You can also beat the eggs and sugar for a couple of minutes, until fluffy, and fold that into the rest of the mixture
