- 1 Egg
- 1c Buttermilk
- 1tbsp Safflower oil
- 2/3c Baking powder
- 1/2tsp Baking soda
- 1tbsp Sugar
- 1 Pinch of Salt
- Whisk the buttermilk and egg together, then sift and mix in the dry ingredients.
- Heat a griddle to 350-370 degrees F, and coat with a bit of oil.
- Using a serving spoon, pour circles of the batter onto the griddle
- flip the cakes once they start to bubble, and the bottom side is golden brown
