(1-Michelin star = a very good restaurant in its category; 2-Michelin star = Excellent cooking, worth a detour; 3-Michelin star = Exceptional cuisine; worth a special journey.)   He is the Head Sommelier in charge of the entire wine program, about $1 million dollors in inventory and about $1.4 million – $2 million per year in sales. ‘Aukai does the purchasing, pricing, inventory, and organizing of the wine list as well.

His impressive resume has had ‘Aukai working in Meadowood – a fine dining 3-Michelin star restaurant in Napa Valley, Per Se – a 3-Michelin star French restaurant in New York and Aquavit – a 2-Michelin star Scandinavian restaurant in New York, N.Y.
