Prerequisite: Successful completion of Culinary Arts III/V with a C or higher
Course Description: This advanced dual credit course aligns with LLCC Course CLA 141: Introduction to Bakeshop. This course introduces students to the equipment, techniques, formula conversions and ingredients of a professional bakeshop. Much emphasis is placed on measurements, scaling and following recipes. Students make cookies, pies, quick breads, yeasts breads, cakes and other bakery items. The course will include lecture and laboratory hours. Guest speakers from the culinary field will supplement the coursework.
